With the 4th of July just a few weeks away, it's time to break out the ice cream freezer and make some homemade ice cream. Okay, I will warn you now though... this is VERY sweet and VERY rich, and people with Diabetes probably shouldn't eat it, or at least eat very little!! If you are on a diet and/or counting your calories, you probably shouldn't even look at the ingredients, because you might gain 3-5 lbs. from just reading the recipe!! LOL BUT, it is DELICIOUS!!!!! Enjoy!!
Sqwrrl's Strawberry Ice Cream
2 lbs. Fresh or Frozen Strawberries 2 Cups Sugar 1/2 Pint Whipping Cream 1 - 5 oz. Can Evaporated Milk 1 Pint Half-and-Half 3 tsps. Vanilla 1/2 Gallon Milk
If using fresh strawberries, wash and cut the ends off. Slice and sprinkle enough sugar over the top to sweeten them. Put in an airtight container and keep in the refrigerator overnight.
If using frozen strawberries, thaw completely.
Next day, place strawberries into a blender or food processor and chop fine.
Place chopped strawberries into a large mixing bowl and add remaining ingredients. Stir until well blended.
Pour mixture into ice cream freezer and freeze according to manufacturer's directions.
Note: If you want it sweeter and richer, you can also add a can of Sweetened Condensed Milk, OR increase the sugar to 3-4 cups. (Personally, it's sweet enough and rich enough to me just following the original recipe amounts.)
